Staub was founded in the Alsace region of France, renowned for fine enameled ceramics, and delicious one-pot recipes. The grandson of a cookware merchant, Francis Staub designed his first enameled pot in an old artillery factory in 1974, merging cast iron's utility with the latest enameling technology. Used for centuries, enameled cast iron is a carbon-rich iron alloy, coated in an enamel largely formed of highly shock resistant glass. Each Staub Cocotte is formed by pouring the cast iron into an individual sand mold that is then destroyed after use. The interior is enameled in a matte black finish perfectly adapted to the modern kitchen; highly resistant to thermal shocks, scratches, acidic foods — and non-stick without chemical coatings tainting your food! The stunning exterior finish is achieved with special "majolique" enamels, producing deeply intense shades and a jewel toned luster that places this cookware in the realm of fine art. With its sophisticated design and optimized weight, the flat lid traps 10% more moisture in the pot, which then condenses on the lid and evenly drips off the 'spikes'. This continuous 'rainfall' basting system is 9 times more efficient than conventional convex lids, allowing simmering meals to reveal their savory flavors while retaining their full intensity and nutritional worth. As impressive to look at as it is to cook with, Staub's Cocotte French Oven goes from the stove top, oven or fridge directly to the table to keep food hot or cold longer — no serving dish required. And cleanup is a breeze — even after braising, frying or roasting, the interior simply wipes clean.
